I've decided to bite the bullet and do a proper mini-pole building with PT posts set 3 feet into the ground and 2 x 6 strapping carriage bolted to the frame on 12" spacing where the cow's weight might push the walls, 24" spacing screwed above that. Bottom 2 x 6 PT, the rest just fir.
I'll probably do corrugated metal siding even though it's a bit cold because the 2 x 6 framework will act as a buffer where she would lean against it. I have a really nice heavy-duty electric shear so cutting the panels shouldn't be too tough, just fiddly.

Nailing decking with tht on top would be a problem so might have to wrap it behind the ledger and run a foot out under the joist only
